Linguine, Serrano and Lemon

Linguine pasta with scallions, serrano ham, butter, ricotta, and lemon is a delicious and easy-to-make pasta dish that's perfect for a quick weeknight dinner.

Ingredients

  • 12 ounces linguine pasta

  • 4 tablespoons unsalted butter

  • 4 scallions, thinly sliced

  • 3 slices of serrano ham, diced

  • 1/2 cup ricotta cheese

  • Zest of 1 lemon

  • Juice of 1/2 lemon

  • Salt and black pepper, to taste

Instructions

  1. Cook the linguine pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and drain the linguine.

  2. In a large skillet, melt the butter over medium heat. Add the sliced scallions and cook for 1-2 minutes, until softened.

  3. Add the diced ham to the skillet and cook for another 2-3 minutes, until heated through.

  4. Add the cooked linguine to the skillet along with the reserved pasta cooking water, ricotta cheese, lemon zest, and lemon juice. Toss everything together until the pasta is coated in the sauce and the ricotta is melted and creamy.

  5. Season the pasta with salt and black pepper to taste. Serve immediately, garnished with additional scallions and lemon zest, if desired.

We recommend to use Italian ricotta or parmesan!
