Veggie soup with sweet potato, carrot, and onion is a nutritious and delicious soup that's perfect for a cold day.

Ingredients

  • 1 large sweet potato, peeled and diced

  • 3 medium carrots, peeled and diced

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 4 cups vegetable broth

  • 1 teaspoon ground cumin

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until the onion is translucent and the garlic is fragrant, about 3-4 minutes.

  2. Add the diced sweet potato and carrots to the pot and stir to combine with the onion and garlic. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

  3. Add the vegetable broth to the pot and bring to a boil. Reduce the heat to low and let the soup simmer for about 20-25 minutes, until the vegetables are completely soft and tender.

  4. Use an immersion blender or transfer the soup to a blender and puree until smooth and creamy.

  5. Add the ground cumin and season with salt and black pepper to taste. Garnish with chopped fresh parsley, if desired.

You can also add other vegetables, such as spinach or kale, to the soup for added nutrition and flavor.
